Main Ingredients
250 grams calamari tubes, cleaned
2 garlic cloves, chopped
1 red chilli, finely chopped
30 ml lemons, juice & zest
1 dash Finest olive oil
1 packet mixed cocktail tomatoes
1 red onion, finely sliced
1 bunch Italian parsley
1 head butter lettuce
Dressing
30 ml lemon juice
2 tbsp baby capers
1 glug Finest olive oil
1 tsp Finest dijon mustard
- Toss calamari with garlic, chilli, lemon zest and juice. Season and marinate for 30 minutes.
- Heat a pan over a very high heat, add a glug of oil and flash-fry calamari in batches.
- Toss remaining salad ingredients on a platter. Scatter over calamari and drizzle with pan juices.
- Whisk dressing ingredients together and dress salad. Serve immediately with crusty bread.
