Club sandwich
For a healthy option, use low GI or seed loaf bread.

Main Ingredients
4 crumbed chicken nuggets
2 slices non sliced white bread, high fibre, toasted
1 half avocado or canola oil, mashed
1 small tomato, sliced
4 slices cucumbers
2 large lettuce
1 tbsp mayonnaise
- Cook chicken according to packet instructions
- Spread 1 slice of bread with avocado. Top with salad and chicken.
- Spread remaining bread with mayonnaise and place on top of filling.
- Secure sandwich with a skewer
- Slice into triangles and serve
